Help! I Need EASY Recipes

Hello girls! So My FI and I are moving into our first place this weekend! I am wondering if any of you can share some easy recipes to get started.

Let me tell you that I have no idea how to cook! I can make grilled cheese, homemade macaroni and cheese, and fry chicken cutlets! That is about it.

Any easy starter recipes would be greatly appreciated! Our kitchen is fully stocked. Now I just need to figure out how to use everything!

I'm calling all of my domestic divas on here! Please Help!

Congrats on moving in!! How exciting!

I think I have the perfect recipe for you... it's on the more difficult side of easy, but STILL EASY and it will wow FH, and anyone else you decide to cook for, I promise. They'll think you slaved away.

Chicken Francaise!!! If you can fry cutlets, you can do this.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
CHICKEN FRANCAISE
1 lb. chicken cutlets, cut thin
1 beaten egg with parsley
Oil to cover bottom of fry pan
Seasoned flour (1/2 tsp. garlic powder, 1/2 tsp. onion powder, Pinch of salt and pepper, 3/4 c. flour)
SAUCE:
2 tbsp. melted butter
1/4 c. water (chicken broth is better!)
1/2 tsp. cornstarch
4 drops lemon juice or to taste
Dip sliced cutlets into seasoned flour. Dip floured cutlets into beaten egg and immediately put in hot oil. Saute until golden on both sides. Drain on paper towels. (Set aside.)
In saucepan heat (low) quickly combine melted butter, cornstarch, water and lemon juice in a pan. Taste sauce and add any seasonings such as salt and pepper or lemon to taste. Place cutlets in sauce and simmer over low heat covered for 5 to 10 minutes.(*You can also put the cutlets in a casserole pan, pour the sauce over them and stick the whole thing in the ovven at 325 for about 10 minutes*) Serve immediately. It goes nice over rice.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
I prefer to serve it over linguine, even though is says rice, blech... Then I serve Italian bread and butter and a ceasar salad. Great for just the two of you!

Seriously, it's really easy and FH goes crazy every time I make it. IT's his favorite dish and he orders it at every restaurant we go to and mine is just as good.

Let me know if you have any questions!

Good! The one thing I thought was weird the first time was the reverse dredging (dipping in flour first, THEN egg second) but EMBRACE THE REVERSE DREDGING! LOL, it works!

Re: Help! I Need EASY Recipes

When I read the words chicken cutlet in your post I started laughing because I remembered my mother. Everyone makes fun of her and says she only maked chicken cutlets!! The best they´ve ever tasted but that´s it.

To my mothers defense she does make other things and actually does cook well but HATES cooking. Chicken cutlets were the easiest for her and she would make enough to last a few days!! Also she worked full time and took care of three crazy kids went to school and went to church 3 times per week so she has my respect.

One idea I can share from her is that chicken cutlets are not just chicken cutlets. Throw some sauce and mozzarella cheese on top and put them in the oven or microwave to melt and you have instant chicken parm!! Other days she would melt american cheese on it and put them in Italian bread. She would also cut them up and toss in a salad. So chicken cutlets can go a long way!!

I have some easy recipes that are actually really good and taste like they would be complicated but I dont have the exact ingrediants off the top of my head. (i´m not that great at just making things up so I almost always follow recipes) I´ll look them up tonight and share.

BTW that chicken Fr. recipe sounds great!! I never realized it could be so easy!! I´m going to have to try that.

This one only sounds difficult, but it is actually really easy to make! It's Honey and Lime glazed Salmon on a warm black bean and corn salad. It's from a Rachael Ray cookbook, and it's always a crowd pleaser!

easy meal... chili mac

ingredients:
1 lb chop meat (turkey, chicken or beef)

1 pkg chili mix (skinny package usually near taco stuff)
1 box elbows

cook chop meat in skillet - when all browned - drain the grease add the kidney beans, the mix and the water the mix calls for - cook a few more mins and put over cooked elbows... sprinkle with cheese...

Re: Help! I Need EASY Recipes

This is Rachael Ray's ridiculously easy and quick penne a la vodka recipe. The only thing I add is that I first cook chopped up-bacon and add that to the recipe! It's great to serve when you're entertaining and want a more 'special' meal.

Ingredients
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing
Directions
Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Definitely get onto allrecipes.com. It's an amazing site, just search or browse what you want and then sort by rating. How can you go wrong with something rated 5 stars by hundreds of people!

A really easy one: mix white wine with a jar of chicken gravy and pour it into a casserole dish. Place thin sliced chicken breast in the liquid and top with slices of mozzarella cheese. Bake for about 20-25 minutes at 350. I like serving this with noodles and a salad. Can't get any easier!

Steak Fajitas

1 cup soy sauce
1/4 cup honey
1 tablespoon Worcestershire sauce
1 teaspoons minced garlic
1 teaspoon ground ginger
1 cup water

In a plastic zip lock add above ingredients and 2lbs of sliced flank steak.
Allow to marinate overnight

Drain meat. Heat skillet over medium high.

Add drained meat and:
1 red bell pepper, cut in thin strips
1 green bell pepper, cut in thin strips
1 onion, thinly sliced

Stir-fry just until meat is done, adding reserved
marinade as needed to prevent sticking.

Serve with warmed flour tortillas.
