Regarding the wording as relates to who is paying - I think that the parents names listed first implies that they are hosting ('paying') for the wedding. If your parents are hosting and are the ones covering the entire cost, they most probably will feel bothered by the idea that some folks may assume that your fiance's parents are contributing. The 'son of' line sounds like a nice gesture to include them on the invite. Regarding how his family treats you - you basically have 2 choices, put them on or don't. Do whichever feels comfortable for you. We all know ourselves, no one can make that decision for us. Good luck. Try not to let it stress you out.

The invite is issued by the 'hosts' of the wedding, in this case your parents, so it's improper for Fi's parents to be included at the top - Your parents are inviting everyone to their party celebrating your marraige - his parents are not co-hosting.
