We're listing the appetizer and the 6 choices for entrees..the question is..do I say anything about dessert? I can tell guest whats in the wedding cake. Tell them there is are veinese tables. Say both. Or not mention dessert at all.

Maybe you could put whats in the cake and then add 'and assorted desserts'

Yeah I would put it like this:
Dessert Wedding Cake Assorted desserts and coffees
