Homeade Sauce..............

Would LOVE to try to make homeade sauce.
Could you share your recipes???

I do not really measure anything so I will try and figure out what amounts I use.

I usually would double or tripple this recipe.

3 lbs or chopped meat (leave out if you want a meatless sauce)
1 large onion
garlic (to your liking)
2 large cans of tomato pureee
2 large cans of crushed tomatoes
2 cans of diced tomatoes
basil
oregeno
parshley
Mr Dash (I do not put salt in my food but feel free to add it if you want)
Pepper
grated cheese.

I dice up the onion and garlic and saute it in a sauce pot, then add meat (leave out this step for meatless sauce). Once the meat is cooked, I try and get the low fat chopped meat...less grease in my sauce, then I add the tomatos. I will also fill one of the large cans up with water, and rince the rest of the cans out, then pour that into the pot also,
Then add your spices...as much as you want, I add about 2 tablespoons of grated cheese, stir all together and turn up heat, once the sauce has come to a slow boil (where you see the bubles) I turn the heat down to a low to let the sauce simmer. I keep the lid on loosely, venting a bit. I usually will take an hour or so to cook. Taste the sauce...if it seems acidy...add a little suger (less than a teaspoon) to the sauce and stir!!

If the sauce seems too thick to you...add a little water during the cooking process.

Make sure not to keep your heat on too high. If you think that you have burned the bottom of your pot...DO NOT stir to the bottom. Get another pot and pour the sauce into it and then let it cook.

My family tends to be purists when it comes to our sauce...but, my great-grandmother always added my great-grandfather's homemade wine!

Saute Olive Oil and Garlic
Add 1/4 lb. ground beef and 1/4 lb. sausage meat (taken out of casing) - saute til brown
Add Red table wine and reduce slightly
Add 2 large cans crushed tomatoes
Fresh Basil
Salt/Pepper to taste

Simmer All Day (Grandma's way)

I want to make it too.
I want to ues frsh tomatoes from my garden.
How would I cook them??
Would I use them instead of the canned tomatoes??

do you want a chunky or not chunky suace?

you probably want to peel your tomatoes first...cut a small 'X' on the top and bottom of the tomato...and then blanche - put in boiling water until the skin by the X peels up and then scoop out and put in ice water...


peel the tomato...cut in half and scoop out seeds...dice tomatoes to your desired consistency and use in your recipe...

if you want a 'smoother' sauce you could mash the tomatoes a bit with a potato masher


make sure you simmer together with ingredients for I would say at least 30 min (can taste tomatoes more)....longer if you want the spices to soak in more
