We debated for months about this. I didnt want to go to Sandals b/c I felt it was too overpriced for the hype. Finally we decided on Excellence Riviera Cancun and we're getting one more day for about the same price as Sandals was going to cost us.

Best bet is to talk to a travel agent.

we're going to Dreams Resort & Spa in Puerto Vallarta, Mexico...it's not adult-only, but we're going early December, so we're not expecting a lot of kids to be there

Riu in Playa Del Carmen Mexico. I have also been to the Riu in the Bahamas. It is fantastic. It is literally right next door to the Atlantis. So we hung out all day at our hotel and ate/drank/water sports. we would eat dinner at our hotel, have a cocktail afterwards then head over to Atlantis to hang in a lounge or the club. It was really nice!
