just start FMingg all the TAs on this site (LIW vendors) and get recommendations
we wanted something active but warm, and one person suggested costa rica. it sounds really nice!
we then found out about the cruise through the panama canal, so we booked that. but for a bit we were thinkin of costa rica

We used Liberty Travel in Massapequa. This is the 2nd time we've used them - really nice and helpful. We're going to St. Lucia - staying at sandals regency.
