Hot chocolate and grand marnier cupcakes

Hot chocolate and grand marnier cupcakes

6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2 tablespoons (1/4 stick) unsalted butter

1/2 cup sugar
2 large eggs
2 large egg yolks
2 tablespoons Grand Marnier or other orange-flavored liqueur
1/4 cup all purpose flour

Lightly sweetened whipped cream

Line 12-cup muffin pan with muffin papers. Combine chocolate and butter in heavy small saucepan; stir over medium-low heat until melted and smooth, about 1 minute. Remove saucepan from heat.

Using electric mixer, beat sugar, eggs, egg yolks, and liqueur in large bowl until thick ribbon falls when beaters are lifted, about 5 minutes. Sift flour over; using rubber spatula, gently fold in flour. Fold in chocolate mixture. Divide batter among muffin papers. Cover and chill until cold and firm, at least 25 minutes. (Can be made 1 day ahead. Keep chilled.)

Preheat oven to 400°F. Bake cupcakes in papers on baking sheet until tops are puffed and cracked and tester inserted into center comes out with moist batter attached, about 7 minutes. Serve cupcakes with whipped cream.

Makes 12.

Just wanted to post that I just made these last night for my office holiday bakeoff and they are so delicious and fabulous!!!!! My husband loved them and so did my co-workers.

It could be my oven, but the baking time you provided didn't seem long enough and I kept the cupcakes in for about double the time before the tops started to puff and crack. Also, is the center supposed to be like molten gooey or more solid? Mine came out more solid.

Thanks for this recipe!!

ETA: I figured out my problem with the oven time discussed above. I didn't refrigerate long enough - until the batter was firm and hard. I had extra cupcakes that I kept refrigerated for like 2 days and when I baked it according to the time, the centers did come out molten. It was just like a restaurants!

Oh, I wanted to ask if anyone made it with a different liquor? I have Amaretto, Frangelico and Chambourg. Is it imperative for me to go buy Grand Marnier?

No you don't turn upside down. You need to use paper cupcake liners so that they come out of the pan - the cupcakes are delicate as they are molten inside. Or if you have those small ceramic baking cup, like in the restaurants - that would make for a better presentation.

I think you can use the other sweet liqueurs - as long as it goes well with chocolate!

Oh good. I have small pyrex custard cups. I could bake and then serve them in that. Thank you.

I made these yesterday and they came out yummy.... only that they look more like brownies than cupcakes but thats just me being a spaz at cooking!!!
