Thank you...i think with cooking its just about doing it enough...i used to cook for myself when i was a teenager bc id get home and my parents worked and sometimes i couldn't wait...my problem is that im so used to cooking for myself or just 1 or 2 other people that i have to get used to making food for alot of people
I think it's so much easier to cook for 1-2 people instead of a family. My best friend swears every recipe is made for a family. I don't know what the heck books she's looking in lol
yes thats exactly my point, cooking for 1-2 people i think is very easy and most recipes i see are for up to 4 people. Having to cook for a larger group of people is different and thats what i need to get used to, maybe i should start not that it will be so hard to do just getting used to it

i had to do it once and it was on a recipe that was just for 2-4 people so i tweeked it a bit, it was fine but only thing is that i added more lemon since it was for more people lol and it was a little too lemony other than that it was ok, just a little more prepping basically.

I always wonder how everything comes out hot and ready when you have to cook so much food. I don't know, I guess a warm oven will do it.

yeah my oven has a thing where it has a heating tray, you put it in the broiler area and it keeps everything warm...i think thats more of what i meant, not necessarily just cooking for more people its more about making alot of dishes at once, yeah thats it lol

Re: Houstons spinach dip?
SO i made the spinach dip last night It came out pretty good - the only thing i skipped was the garlic b/c i got home at 8 and just did not feel like chopping garlic so i added garlic powder instead. I would say it's close to houston's but not quite there. We ended up eating it for dinner even though i bought fish for dinner i just wasn't hungry. Oh, i also bought LF sour cream and part skim mozz cheese, so that could be why it wasn't as rich (i just can't bring myself to buy whole fat anything when i think LF tastes as good). it was very easy to make and quick.
i used to make this other version of artichoke dip that was literally so easy - 1 cup of mayo (lf of course ), 1 can of chopped artichoke hearts, 1 cup of parmesan cheese - bake it for 20 minutes. It's MUCH richer than the one above but also very good.
i add red pepper flakes and/or hot sauce to everything i make to just give it a kick.
thanks for the recipe!

OK GOOD TO know it comes out pretty good hahahaha. Yeah ill use all the actual ingredients bc i actually stopped using anything low-fat, its not good for you and many low-fat things are even worse for you and you're better eating the regular thing. I saw this doctor on oprah explaining all this...thing is through generations our bodies are built and work to how theyve been used to, and things like low-fat, even margarine and all that is foreign to our bodies and it doesn't know how to break it down.
What did you eat it with, potato chips, bread? i was thinking of making pita chips, just cutting them and baking a few of them and some chips

Re: Houstons spinach dip?
Ok I am obsessed with Houston's spinach dip. This is from Paula Deen of the Food Network and I swear, it's just as good. I made it for Thanksgiving last year with Tortilla Chips and people were freaking out... Here it is:
1 (10-ounce) package frozen chopped spinach 2 (13 3/4-ounce) cans artichoke hearts 1/2 cup mayonnaise 1/2 cup sour cream 1 cup freshly grated Parmesan 1 cup grated pepper jack cheese
Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.
Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor. Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes. Transfer to a chafing dish and keep warm over a low flame. Serve with bagel chips.

that's true for most things but my nutritionist told me to buy low fat but not fat free for dairy b/c for whatever reason i digest it better. she did say don't bother buying like low fat peanut butter b/c they actually add sugar to it which makes it worse for you in the end.
i bought baked tostitos. they were pretty good. I didn't really have time to do much else since it was done around 9 so we ate it nice and hot while watching Heroes!

I love Paula Deen. She uses butter and mayo in practically everything! ha ha. Decadent And delish!
