60 per person + 18% + 8%... If I had 100 people, 150 people or 200 people can someone tell me the grand total LOL I have no idea...

ask your bm for help and to find out if you need to pay tax on the service charge.
if tax on service charge, then (pp x 1.service charge) x 1.tax
if no tax on service charge, then (pp x 1.tax) + (pp x 1.service charge)

I've heard mixed answers on this. The most consistent was $1 per head. I guess it really depends on where you have it though. Since you seem to be weighing your options b/w a few different halls - you might want to ask each of them and factor that into your equation when making your decision.
