we're having about 250-275 people at the wedding. We've got a bunch of OOT guests which I need to cover, but what about just general rooms in case people want them anyway?

I booked a room for each couple that I am inviting. The hotel said that if the rooms don't all get booked, then they will be released at no charge to me... and if I book 10 or more, my room is free!!!

We had the same amount of guests and we needed 40 rooms

I did 25-- we don't have a lot of OOT, but we need to stay over, as well as most of our friends since we all live in either the city or Brooklyn... although everyone is from LI, so maybe some folks will crash at their parent's houses..
From where we stand now- we'll need more rooms, but they said they'd be able to accomodate us.
