I made the most juicy yummy roast beef this weekend....

it was very simple.

Here is what I seasoned it with:

1. Adobo
2. Black Pepper
3.Garlic
4. Onion
5.Basil
6. Oregano
7. Ms. Dash (the steak seasoning)
8. Olive Oil
9. Vinegar

this makes for a wonderful marinade. I poked holes in tne roast beef- spread the marinade over it. Let it sit in the fridge overnight.

heat the oven to 350 degrees. Put in one of those roasting pans with a cover. I let it cook for 2 hours 15 minutes, basting every fifteen minutes.

It turned out really well.

Curly, I seasoned it the same way I would season pernil. Unfortunately my DH does not eat pork so I made roast beef instead.

I hate basting!! Too many better things to do than worrying about getting back to the oven .. but the recipe sounds good!

I made a Pot Roast in my crock pot the other day .. and we really enjoyed it. I sliced an onion, a bunch of mini carrots, and a few potatoes, added half a can of beef broth, 1/4 cup of red wine, and salted & peppered the beef ... simple, but yummy .. even the leftovers! Despite re-heating in the microwave, the meat did not get tough at all. (I had sliced the entire Roast after cooking, and put all the leftovers in a container, including all the juices).
