Chili is out- he only eats ground beef, I don't eat beef-
tacos are a good one, old standby.
but soup and panini- I love it.
he wont touch beans- but more importantly- how do I make a panini without a panini maker? Just like grilled cheese?
recs?

does he like tortellini? I have a super easy torellini in brodo recipe.

I don't have a panini making. I usually just fill up the tea kettle with water (close the spout ) wrap the bottom in foil, then place sandy in flying pan and press down on it with the tea kettle until it browns, then flip to other side.

I'm just busting chops. I actually feel like a cozy night on the couch. I think I have a sinus infection.

Re: I need a good recipe for tonight

I like this one for ease. I cut the recipe in 1/2 and do one pot with the ground beef for DH and one with UN-ground-beef (or whatever they call it) for me. I like it cause you don't need to worry about side dishes, and you don't end up with a ton of dirty pots. Plus I like dishes that i just throw crap together and it ends up delicious and there isn't much skill involved

Weeknight Lasagna Toss

Recipe Rating:

Prep Time: 5 min
Total Time: 28 min
Makes: 4 servings, 2 cups each

1 lb. lean ground beef
2 cups chopped green peppers (about 2 peppers)
3 cloves garlic, finely chopped
1 jar (26 oz.) spaghetti sauce
1-2/3 cups water
1/4 cup KRAFT Zesty Italian Dressing
12 oven-ready lasagna noodles, broken into quarters
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

BROWN meat in large (4-qt.) saucepan on medium heat; drain.
ADD peppers, garlic, spaghetti sauce, water and dressing; bring to boil. Stir in noodles; reduce heat to medium-low. Cover.
COOK, stirring occasionally, 10 to 15 min. or until noodles are tender. Remove from heat. Sprinkle with cheese. Cover; let stand 5 min. or until cheese is melted.

Jazz It Up
Stir 1/2 cup BREAKSTONE'S or KNUDSEN Ricotta Cheese into noodle mixture before sprinkling with shredded cheese.

Shortcut
Traditional lasagna can take up to 2 hours to prepare. Our version only takes 28 minutes. You save over 1-1/2 hours!

Re: I need a good recipe for tonight

dice half an onion finely. do the same with a handful of baby carrots or one large carrot.

sautee in olive oil for 5 minutes.

add 1 32 oz container of chicken broth (low sodium if you wish). bring to a boil. adjust seasoning...salt/pepper.

in a separate pot, cook tortelini (you know, boil the water, toss it in, wati for it to float)

add tortellini to the 'soup'. the end.

I also like to hit it off with some freshly grated Parm.

I also throw random veggies in there towards the end to make it even healthier...chopped zucchini, escarole, baby spinach...brocolli or brocolli rabe would work too (just steam the rabe first)

panini:

take a roll/hero and cut length wise. fold inside out (so the doughy side is showing.

add meats/cheeses THINLY. I put cheese on both sides of the bread with meat in the middle for proper sticking.

preheat frying pan, swipe with oil or cooking spray.

place sandwich in pan and place heavy pan (or tea kettle filled with water) on top and press down for a few minutes. turn and repeat on other side. the end.

Re: I need a good recipe for tonight

sweet. Victor placed his order- turkey, cheddar, and bacon. The Panera Bread one has some sun dried tomato fanc mustard- I told him he's SOL.
Then he ordered the soup de jour.
