I need cooking motivation...

I need to learn to cook. This was one of my New Year resolutions. But my main problem is that I come home and I am too tired to do so. I tried making a salad for the next night and that worked well for me. That lasted about one night though.

What foods can I make besides salads that I can keep in the fridge for say 3-4 days at a time. So when I do get home I take out my servings I need and microwave it.
I am trying to avoid pasta or any carbs in the evenings as much as possible.

Any suggestions?

I have the same problem/issue. I have been trying to cook on sundays and making enough dishes to last a few days.

Try grilling/sauteing veggies, any kind of beef/fish.

You may also look into making separate sauces to put on right when you microwave...

How about a roast beef or a spiral ham? A nice sized one could last a few days. ..... nice to smell cooking on a Sunday afternoon too.

I forgot to mention I don't eat meat. If I grill tuna, salmon and other fish, is okay to eat it after 3 days?

hm, I don't think anything will taste good after 3 days, but JMO.

What about a steak you can throw on the grill and cook in minutes or turkey burgers?
