Our RH offers a vegetable purse, which I understand to be sauteed mixed vegetables in a filo dough. It sounds good, I guess.

Im not a vegetarian but FSIL is. My fav dish that she prepares are bean enchiladas.
You can make many pasta dishes that are vegetarian also. (stuffed ravioli?)

Our veggie dish is eggplant parmigiana.
Our hall also offers pasta primavera, or mixed veggies over rice as veggie options.

Re: I need some help from vegetarians
As a longtime vegetarian (16 years! ), I can definitely help you. Vegetable lasagna is an easy, safe dish, as is pasta primavera or eggplant parmesan/eggplant rollatini.
To be honest, of those three options I listed, I prefer something like eggplant parm/rollatini because it's less heavy than the lasagna or pasta...people fill up at CH, and trust me, vegetarians ALWAYS fill up at CH because they don't know what their option will be for dinner.
If your hall has more creative veg options, like the veggie 'purse', or vegetable napoleon (usually roasted slices of veggies stacked upon each other), or a stuffed pepper, those are ALWAYS something that a veg will get excited about.
Feel free to FM me if you need advice. I love food. LOL.

Re: I need some help from vegetarians
I'm not but my MOH (cousin) is and we had
Israeli Couscous Tomato Mozzarella Napoleon Tortellini in a garlic cream sauce
For dinner we had a five choice all with meat or fish and then the 6th choice was a grilled vegetable something---I don't really remember it but my BM from Douglaston told me that the veggie dish didn't have to be one of my 5 choices b/c they HAVE to have something for vegetarians.

My sister is a vegetarian and she usually eats portabello mushrooms for dinner or tofu stir fry or something to that effect.
