What about raviolis? Filled with cheese, and all kinds of happy goodness.

Now I want raviolis...instead of slimfast shakes

I'm a veg, but I hate vegetables (go figure!) Anyway, i would say eggplant is the safest dish to please everyone. I'm so dissapointed when all I get is grilled veggies.

Just make sure if you're doing risotto for the vegans that they use only olive oil to fatten it and not butter or cream. Since butter and cream are not vegan.

I make mushroom risotto at home all the time for DH. One of our favorite recipes. So delicious, but takes forever! It reheats very well, though.

We had eggplant parm at our wedding along with a pasta dish with roasted garlic, oil, and broccoli -- my mom's favorite! Since we had a buffet, there were tons of options for everyone. And since DH is lactose intolerant, we had several dishes prepared with no milk/dairy, although I don't think we actually had any vegans at our wedding.

Good luck with your decision!
