It depends on what type of look your going for. I am going for elegant so I will probably go high. Are you going to the showcase on the 19th? I'm sure they will have samples so you will be able to decide which you like better.
I think no matter what type of centerpiece you have, high or low it will be still elegant. The room itself just oozes elegance. Really, it comes down to your budget and what is important to you. I am getting low centerpieces....overall...low centerpieces just suit me better.
are you getting married at the Inn too? I guess your right it doesn't matter which ones.
