typical response amounts... plus your response time is during a busy time of the year too... (hoildays)
since your day and response time is so close, you may need to make some calls a couple days after the 7th...

Seriously, dont stress yet. You still have over a week. Most of my invites came the day of or the day after. I made the mistake of making my RSVP date 2 weeks before the wedding. Not enough time. I wouldnt worry yet.
