Flan (caramel custard) is an oven-baked dessert that includes a velvety texture and the sweetness of a light caramel sauce.

1 can evaporated milk
6 whole eggs (If you prefer a more solid flan use one or two more eggs.)
1 cup of sugar
2 tablespoons vanilla
½ teaspoon salt

½ cup sugar (for the caramel)
2 tbsp. water

Caramel. In a mold, metal bowl or pot, place ½ sugar and 2 tablespoons water then mix it well. Cook this on medium heat on your stove until the sugar turns amber and caramelizes to a soft stage. Swirl the caramel around the mold totally covering the interior.

Flan. Blend all ingredients until completely mixed. Pour the flan mixture into the caramelized pan. Set the mold in a broiling pan (baño de María). Cook in a 350º oven for one hour. At 30 minutes check to see if it's getting too brown on top - if so cover loosely with foil.

Test the flan to see if it's done by inserting a knife in the center. If the flan is still soft, let it cook longer until a knife inserted again comes out clean.

When the custard cools, lay a plate on top of the mold then carefully flip it over and slide the mold off.

Re: Latina511

Ok...few tips for you.

I would first mix together the custard part then work on the caramel last.

When melting the sugar to make it caramel you can do that in the same mold you would put the rest of the mix in later on. Use like a 9 inch round cake mold. Put the sugar and water in the mold on top of the stove, you will see it bubble up and turn into color. When it reaches the right caramel color swirl it around the mold to cover the whole bottom of the mold. Then pour the custard mix in the mold.

Your going to need a big pan or even a big glass mold anything that you can fit the cake mold in. You need to put the cake mold in the big pan then fill the big pan with water. That’s what “baño de María” . If the water evaporates later on just add more.

Let me know if I confused you.

Re: Latina511

Get a 9 inc cake mold like this.

This is where you would do the flan.

Re: Latina511

Then you would need something like this. Big enough that the round pan can fit in, its like you are going to boil the flan in water in the oven.
