Re: Looking for a quiche recipe

OK, so it's not a recipe, per se, but... I loooove quiche!!

I ususally make broccoli, cheese, and ham quiche. I start by using the Pillsbury ready-to-bake crusts (in the red box, can be found in the dairy aisle). I bake the crust blind for about 15-20 minute at 325 degrees (using the pastry weights if you have them, to prevent the crust from bubbling up), which also helps it from getting soggy. Meanwhile, I blanch some broccoli (about one bunch, cut up into small pieces) until bright green but still crunchy. When the crust is done, I line the bottom with cubes of ham (I've even used sliced deli ham on occasion). In a separate bowl, I mix together about 5 or 6 egss with about 3/4 cup of milk, then add a pinch of nutmeg, and salt and pepper to taste. I stir the broccoli into the egg mixture, and add about a cup of grated cheddar cheese and some more ham. I then pour everything into the crust. I sprinkle some more cheese on top and then pop it in the oven for about 40 minutes. When it's done, it's great with some fresh parsley or chives on top.

That's it! I don't make it often because it's obviously not too low in fat.... but it's delicious!! There are other lower fat recipes out there... I've made it with mostly egg whites once and it was very good! Enjoy!!

Hope this helped
