Mexican meatloaf in the slow cooker!!!! Let you guys know how it comes out. Let me just say this is soooo good, sooo much better then regular meatloaf!!!! Recipe 2LBS ground beef 2 cups crushed corn chips 1 cup shredded cheddar cheese 2/3 cups salsa 2 eggs, beaten 1/4 cup taco seasoning
1. combine all ingredents 2. shape the meat into a loaf and put into slow cooker. Cover and cook on low 8-10 hrs.
To glaze the meatloaf, mix 1/2 cup ketchup, 2 tbsp brown sugar and 1 tsp dry mustard. Spread over cooked meatloaf. Cover and cook on high 15 minutes. This glaze tasted great...you can use it as a dip for anything!!!! This really made the meatloaf.
Hints: I cooked it on 4 1/2 hrs high and I didnt have salsa so I used dry taco seasoning and liquid forms. If you dont have a slow cooker you can of course cook this in the oven like a regular meatloaf.

Taco Bell Just opened by me..... i waited on the drive thru line the other night for 25 minutes (the dining room was not opened at the time.
hahaha......im pathetic.
but the food was delish :)
I need to lay off the bell if i want to fit into my dress.......
