We did our menu last week - they pretty much helped us pick things out. For instance, we had to pick 8 chafing dishes for CH and they were suggesting we do x amount of chicken, x amount of beef, etc. I would listen to their suggestions, but of course pick what you think you and your guests would enjoy the most. Have fun!!
