Milleridge Cakes

So, I tried out a cake from the Milleridge Bakery this past weekend and was so disappointed. I was concerned because some people said their cakes were dry so I chose a rum soaked vanilla cake with cannoli filling - which is my favorite cake filling and what I have always planned on for my wedding! Well, we were so unimpressed. The cannoli filling was terrible and the cake was still dry! Any other Milleridge brides have suggestions of a cake that they do well? I love chocolate and am thinking of leaning that way now, but before I buy and test every cake they make (so annoying that they don't do a tasting!) I'd love to know what others have found to be good there.

Thanks!

Re: Milleridge Cakes

We did white cake (not yellow) with chocolate mousse. Our cake was very tasty. White cake's my favorite, but it is by its nature drier than regular cake. It was not too dry though - it was very good. I was worried too since I had also read they do cakes pretty dry and my favorite was already on the drier side, but it was great. Maybe they just have a bad yellow cake recipe? Or maybe the cake was stale? I worked in a bakery as a teenager so I know how bakeries make 'fresh' cakes. They tend to put them together when ordered but the layers of cake could've been sitting in their fridge for a long time getting dry but not going bad... I'd try a specialty flavor - one that they probably wouldn't have sitting in the fridge. Maybe that's why my white cake was good - it sure seemed like they don't get that request very often.

Oh no What if you try something like a cheesecake or carrot cake - totally different from regular 'cake' so maybe it won't be dry? I would speak to the manager and your BM and tell them your concerns - maybe they will try to make you cake 'extra moist' that day
