Re: MY FIRST QOTD, I AM SO NERVOUS HAHAH
im sure most of you ladies will cringe at this but FH is vegan and I am vegetarian. But I consider myself to be the Casserole Queen.
I make a ridiculous shepherds pie- vegan of course. This isnt my recipe but very close..i use black beans instead of kidney and I sprinkle vegan cheddar on top of the potatoes
* 4 large russet potatoes, diced * 1/2 - 1 cup soymilk * 1/2 teaspoon salt * 1/2 cup water or vegetable stock * 2 onions, chopped * 1 large bell pepper, diced * 2 carrots, sliced * 2 celery stalks, sliced * 1/2 pound (about 2 cups) mushrooms, sliced * 1 15-ounce can chopped tomatoes * 1 15-ounce can kidney beans, drained * 1/2 teaspoon paprika * 1/2 teaspoon black pepper * 2 tablespoons low-sodium soy sauce
Dice the potatoes and steam them until tender. Mash, adding enough soy milk to make them smooth and spreadable. Add salt to taste. Set aside.
In a large pot, heat the water or stock and cook the onions for 3 minutes. Add the pepper, carrots, and celery and cook for 5 minutes over medium heat. Add the mushrooms, then cover the pan and cook an additional 7 minutes, stirring occasionally. Add rem
Preheat the oven to 350° F.
Put the vegetables into a 9” x 13” baking dish and spread the mashed potatoes evenly over the top. Sprinkle with paprika. Bake for 25 minutes, until hot and bubbly.

Re: MY FIRST QOTD, I AM SO NERVOUS HAHAH
well since its sunday, dh made his homemade sauce like usual. I made the meatballs for the sauce so we were cooking together just a little while ago. Sauce is still cooking so im on the comp while hes next to me watching football. We have to go back in the kitchen soon though to finish it.
We also love shrimp, i make a few sauces for shrimp, either scampi, franchaise and i also play around and do my own thing many times. Using white wine usually, butter, and combining different ingredients. He loves it with rice and beans.
crepes are easy and fun to make. Hmmmm maybe ill ask Dh if he wants me to make this for dessert, although after pasta and meatballs it might be too much hahaha
Oh God...we both love all food...but I think for us is sushi...especially when we take it home and just veg and eat!!!!

Re: MY FIRST QOTD, I AM SO NERVOUS HAHAH
Here is another one of my favorites...not my recipe.. Its sooooo quick to throw together. I actually made it twice in 2 weeks and theres always enough for the 2 of us to bring to lunch for 1 or 2 days.
I find if i eat it alone it can be a little dry so I use tofutti sour cream too
Taco Casserole
Ingredients (use vegan versions):
1/2 package of Boca Burger meat substitute ( or yves ground) 1 package taco seasoning (check ingredients) water 1 15-oz can corn 1 small can tomato sauce totilla chips 1 15-oz can of beans (refried or black) 1/2 onion diced non-stick cooking spray 2 cups grated soy cheese
Directions:
Spray pan with non stick spray. Warm the meat substitute a few minutes. Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package. Cook for a few minutes, add tomato sauce and corn. Cook a few more minutes.
Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small). Pour mixture over chips, then cheese, then more chips, mixture, cheese. The mixture should be the last layer on the casserole. Then put a layer of beans and more cheese.
Bake at 350 degrees for 15-20 minutes until hot. Very yummy!
Serves: 6
Preparation time: 15 min

Aww I'm sure you'll make a great BOTW!
We are the King and Queen of takeout - our favorites are probably either paninis from La Bottega or to go from California Pizza Kitchen! haha

What a great first QOTD!!!
We love SO MANY foods...I would have to say one of our favorites and most special is Sausage and Potatoes baked in beer and butter. It is SOOO delicious and it's one of the first dishes I ever made for FH.
