My homeade Macaroni and Cheese Casserole. (but since we're both on WW, we haven't had it)

Dani's Mac and Cheese:

2 cups Elbow Macaroni
4 TBSP Flour
1 TSP Salt
1 LB Velveeta Cheese
4 TBSP Margarine
3 Cups Milk
1/4 TSP Pepper
1 Cup Buttered Bread Crumbs (2 TBSP butter mixed with bread crumbs - just enough butter to coat crumbs)

1. Cook and drain elbows. Place in a buttered casserole.
2. Melt margarine in a medium sized pot. Add flour, salt, pepper and blend together. Add milk slowly until sauce thickens.
3. Cut cheese into cubes and add to sauce, stirring constantly until cheese melts.
4. Pour sauce over elbows and top with buttered crumbs.
5. Bake at 350 degrees for 30 mins.

We really love Taco Bell for just hanging out watching tv on the couch. But we don't do it that often, I cook almost everyday.

Some of fh's favorites that I make are turkey chili, baked ziti, honey chicken, and whole wheat macaroni and cheese. He doesn't really help out but that's okay, I love to cook and don't really love people getting in my way!

My two favorite meals are:

Lamb smothered in red wine and garlic with roasted potatos on the side. YUM.

And...

Cuban style dinner- roasted pork, rice and beans and yucca. We eat this for Christmas Eve and let me tell you, it's the SHIZ!

I don't see FH very often due to long distance so when we have home cooked meals, they are all special in their own way. FH likes when I make chicken marsala or francaise... or shrimp scampi. He makes his sauce and meatballs with pasta or does chicken parm. He also introduced me to a delicious meal we call 'Crockpot Beef'

'Crockpot Beef'

Stew beef, cubed
1 can beef broth
1 can cream of mushroom soup
1 envelope onion soup mix
Egg noodles

In a slow cooker add beef, broth, mushroom soup and onion soup mix. Turn on low setting for 4-5 hours. Serve over boiled egg noodles. Goes well with warm bread too and is good for the cooler months (fall / winter).

We can't limit it to just 1 food, however FH and I bought Katie Lee Joel's cookbook 'The comfort table' and we've had so much fun coking recipes from it.
Our favorite is the sesame corn sautee' and the buttermilk pancakes with carmelized bananas.
