Re: Need a GREAT Macaroni salad recipie
I don''t have one but I know that the secret to the deli macaroni is putting vinegar in it!! I would say boil up some elbow macaroni, add mayo and some vinegar, add chopped celery and red peppers

This is how my Mom does it - she has been making it for 20 years at least and everyone loves it. The exact amounts are up to you - you will see how you prefer it. Prepare a box of elbow macaroni - Mueller's brand preferably, it really does work the best for some reason. Chill the cooked elbows in the fridge for a couple of hours. Then add about one large tomato and one large green bell pepper, chopped up. Stir in a couple of large spoonfuls EACH of Miracle Whip and Hellman's mayo. You need both - gives a great flavor. Season with salt and pepper. Chill (preferably overnight) before serving. When ready to serve, if it seems too dry, add a little more mayo & Miracle Whip. Sometimes the macaroni absorbs too much.

My favorite is the Hellmans recipe. Go to Hellmans.com and do a search for it. It is the best and they use vinegar. Tastes better than the deli.

instead of vinegar I use a bit of pickle juice. Gives a little zing : ).

I use pickle juice too. Here's the last recipe I made that was a big hit:
Dressing 1/2 cup Sour cream 1/2 cup Miracle whip 1 cup Hellmans mayonnaise 2 tablespoons Prepared mustard 3 tbls sweet pickle juice salt & pepper
Salad 2 tablespoons minced onion 2/3 cup celery -- minced 1 red pepper - minced 2/3 cup sweet midget pickles -- chopped -- do not use relish 3-4 tomatoes; seed -- chopped 8 cups elbow macaroni; cook, drain -- cool well before adding
Combine dressing ingredients and set aside. Combine remaining ingredients in large bowl. Coat well with the dressing. Refrigerate at least an hour before serving.

Re: Need a GREAT Macaroni salad recipie
Everytime I make macaroni salad it is too dry. I tried regular once and once with the italian dressing and it never comes out good. I think next time I will buy the Suddenly Salad kit by Betty Crocker.
