Brown the chicken about 90-95%, then add a jar of salsa. Cook for about 5-10 minutes until the chicken is done. You can either serve it over rice or get some wraps, add some cheese and make a burrito type thing. I also added a green pepper that was left over. DH loves it. Not to offend anyone, but I called it Mexican Chicken.

If you have other stuff, you can make it crazy- maybe add onions or corn, cheese, I was thinking of using it as a stuffing for peppers, insted of a chopmeat filling. Its also a good way to use up salsa after a party.

Re: Need a Simple Chicken Recipe for tonight
Let's see if I can remember this correctly (I made it last night)ingredients: 1 pound of chicken (thin slices, or breasts)
1 Table spoon McCormicks Lemon and Pepper seasoning salt
2 Tablespoons butter
1 tablespoon flour
3/4 cup chicken broth
1 cup quartered baby carrots (quartered lengthwise)
1 cup sliced onion (I left that part out when I made it)
1/4 cup sour cream
1 teaspoon parsley flakes
Melt butter in skillet over warm flame(or heat)
Rub the lemon/pepper seasoning on to the chicken
saute chicken for 7-10 minutes, then flip over and saute for another 7-10 minutes, then remove from skillett
add carrots and onions- saute for 2 min
(whisk the chicken broth and flour together and add to skillet) saute another 2 minutes
Mix the parsley and sour cream together and add to skillet. saute another 2 minutes and then pour it all on top of the chicken

Re: Need a Simple Chicken Recipe for tonight
The easiest way to make chicken is just to grill it and then squeeze some lemon on it, or open a can of ready chicken gravy and serve some instant mashed potatoes and a salad on the side! The whole meal should take less than 20 minutes to prepare!FH is not impressed with my cooking skills

A can of Campbells Chedder and Broc soup w/some chopped up chicken in a skillet (with a serving of pasta) is an awesome dinner.

I like this over rice. My dad used to bake the chicken, soup and bro. topped with cheddar cheese.
