I'm making dinner for a friend and she can't eat dairy. She also doesn't eat meat except for chicken and she doesn't eat fish! I also have to find something that her FH and my FH will like, and they are both picky eaters.
Any ideas?

I have a good recipe for lemon chicken, no dairy involved! And I also have a really good recipe for a pineapple tart. It uses vanilla instant pudding, but my mom is lactose intolerant and I just prepare it with Lactaid milk and she's fine. Let me know if you want it

i would buy the special lactose milk and just use that to alter the recipe..... there is one brand i like called 'dairy ease'....

Ok, I was thinking of chicken piccata. I guess I could make pasta on the side and a veg. I'm not sure FH will like a pineapple tart. Do you have any other dessert ideas?

This girl is a tough cookie isn't she!
Though I don't have recipes.... I can suggest some stuff that I always eat where I don't have to take my Lactaid pills- If you want to BBQ- Grilled Chicken (can be marinated in BBQ sauce, terriaki, italian dressing...) then there is chicken marsala (made with wine sauce and mushrooms) chicken franchese (lemon wine sauce)
These all don't contain any dairy.
for dessert you can do any type of pie (apple, cherry), jello, plain cake with frosting, fruit platter

Yeah, between her and the 2 guys, this is not going to be easy! But now I'm getting a better idea of what to make.
