How about taking her out for a day just about her.... no wedding talk or anything related to you. Make her the center of attention for a day!

I second the Tiffany's gift, that's always classic - specially since they usually engrave for free. You can also get her a really nice coach pocketbook

My cousin went beyond the call of duty and helped me. I sent her a gift basket of choclates/nuts from winecountrygiftbaskets.com I thought the prices were very reasonable.
