Ok so after buying our new house, we've decided to rent out our first house - What kind of information do I need to get from prospective renters and if you have any advice, I am all ears! TIA!

i would get a job reference that you can check. i would also make sure you set certain rules as to who will be living in the house. my cousin rented to two people and ended up having about 6 people in a 2 bedroom.

You know real estate agents look for people for you. This is at NO cost to you but they charge the tenant a finders fee. This way the agent is doing all the background and getting all the phone calls. Any local real estate agent does them.
If your doing them on your own, definitely get job references. Call and ask to speak to a manager NOT the person who they tell you to call ( it might be a friend) gets Security $$ from them so you wont get stifted. and also do drive bys and (if its legals) occational walk-ins .. You wanna make sure that these people aren't puttin holes in the wall or theres like water damages...
