I'm pretty sure Fox Hollow has rooms for smaller weddings.

Re: Need help PLEASE!
aside from the smaller reception halls, u can also look into places that have different size rooms. i know the country garden estate at east wind is on the smaller side, along with one of the rooms at jericho terrace too...the irish coffee pub is also really nice along with the meadow club. not sure of the minimum, but i know they're specifically for smaller scale parties!

Thanks everyone. My FH and I decided to check out some new places and then decide what to do... We booked a lot of vendors already and we don't want to change the date, so we may just pay for the people who are not coming...

I would also check out the Swan Club. We got the Garden Room (which fits up to 160) for a minimum of 100 on a Saturday night in September. I'm sure they would work with you if you are having a smaller affair.
As an aside, try not to stress (I know this is easier said than done)... You have plenty of time to work this out. Enjoy being engaged. Don't let the details ruin the experience for you.

If you are considering paying the extra $....
Some places will have you pay for the minimum.. but give you stuff as extras... in other words if you only have 75 guests.. you pay for 100 but for the difference in $$ you pay, you get more food choices, or a vienesse hour, or more appetizers ect. Don't pay it without getting stuff for it!!

The Irish Coffee Pub in Islip does small weddings, excellent food, very nice place.
Capt Bills where I am getting married also has 2 other rooms that do small weddings. I believe in the harborview room, where our CH will be.
Here is a pic I took of the room.. Obviously it will be decorated, (I took the pic in the middle of the day as they were cleaning).. and it overlooks the bay.
If you're VERY below your minimum, you can always invite LIW brides to your wedding so that you don't end up paying too much more for 'invisible' guests
