Need help with flowers!!!

Hi girls:
This weekend we went to see another florist, who like the first florist we saw was not able to give us flower ideas for bouquets. After these two visits, my gameplan is to not rely on the florist to design a bouquet for me, and actually bring them a picture instead.
I have seen the flower thread, and there are some beautiful bouquet's there, but nothing that strikes me as going with my dress, which is a-line, decorated with lots of pearls and embroidery.

I would like to try using mauve or dark red mini calla lillies, hypericum berries, stephanotis, and possibly roses. I am trying to keep the bouquet not as full as in martha steward displays, but rather more cascading versions or upward and sleek.
I also like jpsgirl's bouqets (red roses and stephanotis) and jennbaby's round bouquet with roses and stephanotis, but would like to stick to the calla theme.

Any ideas? I have given up on florists helping me and can't use a Long Island florist due to a NJ wedding.
