Can't think of anything besides tacos right now (too much chopping), but go on the food network, I'm sure they have something good.

Re: need ideas for

Make a santa fe salad:

1 box frozen corn, cooked
1 avacado, sliced long ways
1 can of black beans, drained and rinsed
1 or 2 heads romaine lettuce (you can use spinach too)
1 box of cherry tomatoes or 2 tomotoes sliced
2 chicken breast (skinless/boneless/ each the size of a check book)
1 tbl sp of extra virgin olive oil
salt and pepper

for the dressing
1 tbl sp dijon
1 tbl sp balsamic
1 tbl extra virgin olive oil

Turn either you grill on or skillet, but lightly brush some olive oil to prevent sticking

Take chicken breast, and season with olive oil, salt, and pepper and cook chicken until cooked (no pink) and char marks apear on both sides of chicken. Remove from heat and seat aside. Let cool.

Prepare your salad. Combine:
1 box frozen corn, cooked
1 avacado, sliced long ways
1 can of black beans, drained and rinsed
1 or 2 heads romaine lettuce (you can use spinach too)
1 box of cherry tomatoes or 2 tomotoes sliced

Prepare your dressing:
Whisk together in a bowl until well blended
1 tbl sp dijon
1 tbl sp balsamic
1 tbl extra virgin olive oil

Once chicken is cool, slice into the chicken (you can make chunks, but I prefer thinner slices) to create thin slices, roughly the size of a quarter. Once sliced, combine with salad mixture. Take dressing and pour on the outer border of salad. Toss the salad so all peices are evenly coated.

Makes 4-5 servings

Its super healthy, high protien and filling. I take the extra to work for lunch which keeps me full all afternoon.

ETD for spelling lol

Re: need ideas for

i know this is boring but if u just add some spices to the chicken and eat that plain and make some side dishes.

i usually make grilled chicken and eat like brown rice and string beans or something on the side.

Re: need ideas for

ok another good one I made last week which FH loved!

1 Can Cream of Chicken soup (the low fat/no fat kind)
1/2 cup fat free sour cream
5 Chicken breast (boneless/skinless each sz of check book)
1/2 cup sun dried tomatoes, sliced
1 tbl spoon extra virgin olive oil

Put oven on 350 degrees. Take a deep pan, like the type u would use for brownies and drizzle olive oil on the bottom.

In a bowl combine
1 Can Cream of Chicken soup (the low fat/no fat kind)
1/2 cup fat free sour cream
1/2 cup sun dried tomatoes, sliced
Stir until blended

Put chicken in pan, and pour generously over the chicken your cream mixture. Place in oven for 20-25 min or until chicken is no longer pink.

Serve with green beans and immediately.
