So my wedding is sort of closer than I think! And FH and I were talking about this so I wanted to know what you all have already experienced --
How many guests had to cancel last minute on attending your wedding? We need to give the caterer a final headcount about 10 days before the wedding so I would like to know whether to reduce the number by 1 or 2 people or not to bother.

we had one couple cancel a few days before (literally 2 hours after we made our final payment, so the NRC refunded us their plates). another couple cancelled the day before because their flights from FL were cancelled due to the hurricane. we were over our min, so NRC had agreed to let us pay that day for a couple who didn't know if they'd be able to make it (older couple with health issues, wouldnt know until day of or day before) if they came.
i dont think we had any no-shows w/out advance notice.
that couple did end up coming, so it turned out OK. our hall wanted the names and tables for everyone so it's hard to give less than the true count. hope this helps
edit: we also paid for our rabbi who rsvp'd yes, stayed for the CH and then left before the reception

We didn't have any no-shows, but we did have 3 couples cancel w/in 3 days of the wedding, one was the morning of. But, my cousin also decided to just bring his girlfriend after RSVPing for just him alone and MIL's friend brought her son as her date when she RSVP'd as only one....so all in all we were down by 4 ppl total.

I would not recommend doing this. Your seating chart & placecards have to match with the # you give the hall.

we didnt have any last min cancels but we did have alot of no shows... i think a good 12-14 people didnt show..we had a few extra guests from my DHs family side so we ended up losing 5-7 peoples worth(money wise)
