FH 'invented' this really delicious (and fairly easy) chicken dish:

-- grill up some chicken with garlic and onions
-- when chicken is almost done, add avocado, cilantro, and some cheese (optional) on top of it
-- serve over rice

we also really like it with a 'salad' of finely chopped tomatoes and onions (i'm not even a huge onion fan but it really works great with this meal)

bon apetite

Sometimes I make this breadcrumb marinara that FH and I really enjoy, actually, me more than FH. I Pasta!

-Saute some garlic and onions in olive oil until the onions get translucent (about 5 minutes or so).
-Pour in 1 can (or 2 if you like) of diced tomatoes.
-Cook for maybe 10 minutes or until tomatoes are soft (smush up the tomatoes with the back of your spoon to check)
-Add your favorite herbs and spices and maybe some romano or parmesan cheese MMmMM
-Add about 1/2 cup of Italian breadcrumbs (or more depending on the consistency) and stir all together.
-Add some ricotta if you're feeling frisky!

Oh yeah, make the pasta too
