Please share what your favorite dishes are other than, pizza, pasta. Those are the obvious. LOL

I like making taco salad except I use the mexican beans. YUM.

Here's two of my faves, which are both great for cool weather

Incredible This-will-become-your-favorite Veggie Pot Pie

2 frozen pie shells, or fresh dough if you have time
2-3 cups veggie broth
1-2 potatoes
3 medium carrots
a variety of veggies such as green beans, zucchini, mushrooms, or just about anything.
1 package frozen spinach
grated or sliced cheddar to cover pan in two layers
lots of good spices: garlic, cumin, tarragon makes it savory, whatever you like.

Directions:

Thaw pie shells and try real hard to take one out of the tin w/o it breaking into a million pieces. If you manage, you are a god(dess). Meanwhile, cook chopped veggies (NOT spinach, just keep it till later). Cook in microwave or oven till about 3/4 cooked. To make sauce, heat broth in large saucepan, add spices, and lower heat. Add slowly either cornstarch or flour (I use flour), till slightly thickened. You can add milk and use veggie buillon cubes if you wish, for a thicker consistency/more flavor. Add the cooked veggies to the mixture and coat them with sauce.

Meanwhile, layer half of the cheese on the bottom of lower crust. Spoon in veggies and sauce, then add spinach on top. Add rest of cheese on top of that, and close it up as best as you can with the other shell. Bake at 400 for about 45 minutes, (until crust is brown).

Makes: 3-4 servings for hungry adults, Preparation time: 15 minutes, Cooking time: 45 minutes.

Pasta e Fagioli

1 bag soy crumbles (found in frozen section)
1 (29 oz.) can diced tomatoes
2 (14 oz.) cans Great Northern beans, undrained
10 oz. box frozen chopped spinach, thawed and squeezed dry
2 (14.5 oz.) cans vegetable broth
1 (8 oz.) can tomato sauce
3 cups water
1 TBS minced garlic
1 TBS dried parsley
1 tsp garlic powder
1.5 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried basil
1/2 lb whole-wheat seashell or small, shaped pasta
Grated or shredded soy or fat-free parmesan (optional)

In a large stockpot, brown soy crumbles. Add diced tomatoes, beans, spinach, vegetable broth, tomato sauce, water, garlic, parsley, garlic powder, salt, pepper and basil. Bring to a boil; reduce heat and let simmer, covered, for 40 minutes. Add pasta and cook uncovered until pasta is tender (approximately 10 minutes). Ladle soup into individual serving bowls. Top with cheese, if desired.

Serves 6 - 8

(I'm actually eating the Pasta e Fagioli as I type this!)

Anyone planning on raising Veg children?

If FH and I have children, we do plan on raising them vegetarian. However, just as my parents told me when I decided to go veg, if the child wants to eat meat at home, then they will have to learn to cook it. My mom was clear when I decided to go vegetarian at the age of 12: consult with my doctor about the required nutrition for an adolescent vegetarian, and learn to cook since the kitchen at home was not a restaurant.

Obviously, FH and I would consult with a pediatrician about how to properly raise a child vegetarian. I would hope that our lifestyle would be something that our child would take on as their's, however they may not. And we'd be okay with that.

I dont think there are any Whole Foods around me....does anyone know where they are??

Thanks Kris for the recipes and the info

Right now FH is pretty much a veg...he eats what I cook...so I never cook meat. He does eat meat at parties and restaurants but other than that...he never asks for it or complains about not having it. I plan on raising my children vegetarian once Im educated on how to do it properly so they are getting the nutrients they need. I have a close friend whose whole family is veg...so I will ask her for help!!!

And ...NO seafood for me either.........never ate it before i was a veg and never will!!! The only thing I have ever eaten that comes from the sea is tuna salad.

I'm not a vegetarian but I wanted to stop in and add a great restaurant idea. Telullah's in Bayshore! They are not exclusively vegetarian, but have a lot of vegetarian options. It's a tiny place (I think it's on 4th street just north of main st.) and I would probably suggest it more for lunch. They also do catering. They did my shower and it was fantastic. Everyone loved the food, very different than the typical ziti type stuff. One guest who's a vegetarian commented on how nice it was to have so many vegetarian options!

I don't eat meat because I don't want to support factory farming. Factory farming is cruel, it increases pollution and global warming, it is the cause of various diseases in humans, and it is a slap in the face to all the poor people in the world . It is needless and unnatural and based entirely on greed and capitalism. (This goes not just for the meat, but for the dairy industry as well).

On the other hand, I support small scale farmers who treat their animals well and give them a good life. Meat eating will never go away. I look at it this way, if I am not desperate for food and don't find killing an animal myself appealing...why should I do it? (or have someone else do it for me for that matter). Being veg is just nicer, healtheir, and makes more sense to me...

FH has been a vegetarian much longer than me. His family is all veg and both his sisters have raised their 2 children veg. It is entirely false that veg children are not healthy or lacking.

Dr. Joel Fuhrman wrote a great book on nutrition and giving your kids a healthy start by minimizing or eliminating animal products. I recommend it.

Veggie here! I have been for 7 years, however, I barely ate meat before the 7 years.

I became a veggie for health reasons, and I do love animals. I have seen those scary PETA videos. However, the main reason I am a veggie is bc I don't like the taste of meat.

I don't mind preparing chicken, turkey or fish for FH. I can't even look at Beef... it's disgusting!

I'm not vegetarian, I'm kosher. However, kosher is VERY expensive so I was going to try and have a dairy wedding (no meat, but we will have fish). Can I join too?

I'm worried people (like my brother the carnivore) won't feel satisfied withhout meat. If I offer two different fish options or a pasta dish, do you think people will think I'm being cheap and/or leave unsatisfied. A lot of people I know judge a wedding by the food. The thing is, cheese is my favorite food, so I want to have what I will enjoy at the wedding too!

This is a tough one because not everyone likes Fish... maybe you can offer ONE meat dish? I don't know -- I have very mixed feelings and since I'm a vegetarian...it's even harder!!!

With a kosher wedding, its either meat or dairy, you can't have both. But since I like dairy better than meat, I wanted to just eliminate the meat all together. If I offer a pasta option, do you think two different fish options would be overkill?

That was sweet of you to take the time to type these receies out. Thank you.

I am not a strict, strict vegeterian. At thanksgiving I may eat a slice or two of turkey, and I really don't eat much meat at home. What I did was during lent, I didn't eat meat at all. I'm greek orthodox and usually it's no meat AND no dairy during lent. That kind of got out of hand so I just did the NO meat and my body felt so much trimmer.

I don't know...well, anything...about fish. But what about a lo mein made with shrimp? It's a little more interesting for folks that like to think outside of the 'fish w/ side of veggies and potatoes' box. And then offer a more plain fish option. Then you can have a couple of veggie options with dairy...like a butternut squash ravioli in a light cream sauce, or a hearty veggie lasagna.
If you're having a kosher wedding, I'm assuming that most of your guests would know beforehand that it's kosher, and once they see a cheese platter at the cocktail hour, they'll probably be surprised in a good way that you chose to do dairy over meat!

Shrimp is a definite no-no (as are all shellfish), but I like the idea of a traditional fish dish and then a more unconventional choice. I would really like to think people would be pleasantly surprised, but I'm still worried about it.

Ah, gotcha.
If I were you, I'd call around to halls that do kosher weddings and independant kosher caterers. I'm sure that they've accomdated events where the hosts preferred having dairy over meat.
In my experience booking a veggie wedding, I called around a lot...spoke with banquet managers and chefs, and if it sounded promising over the phone, THEN I booked an appointment to meet with them. There were a few places that kind of hemmed and hawed over it, like 'well, we COULD do a vegetarian wedding', and I thanked them for their help and didn't bother meeting with them.
Ask for sample menus - that will give you a great starting point for ideas.
