We're either making chicken jambalaya ( from a mix. . .) or beef tacos.
It depends on which one has a later exp date, b/c they are both in the fridge. The other one we will have tomorrow.

i cooked the last 2 nights and we'lre going to be away all weekend...so leftovers tonight!!!
either pot roast or chicken florentine (slightly altered since DH doesn't like spinach)
How does that work ? Isn't the spincah what makes it florentine?
do you just use cheese?

Re: OK...who's cooking tonight??
I am cooking, since my meals are healthier then DH's 'bachelor specials' as I like to call them. He's darling when he tries to make dinner, but his favorite meal - if you can call it that - is corned beef hash fried up with eggs and cheese. (darn, I wish they had a 'queasy' smiley!) My arteries just shudder even talking about it!! So here's what I'M making tonight
I'm making chicken cutlets with feta cheese, tomatoes and onions - it's so easy and really yummy! And salad too. Oh rats, now I'm hungry!!!

That''s one of my FH's favotites too. Fortunately he usually saves his corn beef hash cravings for the diner. Only becuase it come out better than his.

MIL is making us dinner tonight...since our kitchen is under construction and she wanted to thank DH and me for helping her out! She's making grilled tofu with sauteed asian greens. YUM! She even has dessert!

I think I'm alone tonight - so I'll probably just make an egg white omelet with everything in it. Something easy!

Excellent Question!!!
I used a can of stewed tomatoes as the base, and chicken cutlets, brocolli, cauliflower and mozarella cheese and cooked it all together. it actually came out really good!!!

palebride - that's the second time I've heard you describe one of your recipes and you sound like such a good cook! You can come to our house to make dinner anytime, or maybe just teach DH
