My pocketfolds do not have inner envelopes. Should I just have the calligrapher do the outer envelope or should I have her write on the pocketfold and use that as an inner envelope (the pocketfolds are white). This would require me mailing not only the envelopes to the calligrapher but the invitations as well.

Just have her calligraph the outside envelopes as if they're the insides.
For example:
Mr. & Mrs. John Smith 1234 America Way Somewhere, NW 12345
