What you might want to do is talk to the bakery and let them know the situation. Sometimes they can work with you so that you can get a great looking cake and maybe serve the guests a typical Dominican cake from an extra batch that they make. Some bakers create the illusion of a cake with only the top layer as actual cake and the rest will go in a sheet which they serve to the guests. Sometimes instead of fondant they can use butter cream...the only thing with this is that it doesn't look as nice and if the temperature in the room is a bit too high, it might melt a bit. I love Dominican cake so I would try to make it work so that you can have your cake and eat it too (corny, i know)!

Re: Poll-Cake Issue!
i would go with the pretty fondant cake if that picture is what you are wanting. you cant really duplicate that with buttercream. i love the lace design -- if you havent picked out china yet you should look at lenox venetian lace
if you just wanted a smooth design, you can get that with buttercream but that kind of detail etc needs fondant.
my only hesitation would be if you really want your guests to experience a dominican cake, and you're afraid it just wont taste good with the fondant.
