Just to add - my florist told me the same thing - it may be risky - because the stems do stain.

I had about an inch and a half uncovered at the bottom. No problems with anything leaking and ruining my dress. I think like what shamma said, if they're taken out of water in enough time and then put on tissue, it'll be fine.

I was leaning towards having mine covered and the BM's open, but in the end I went with the full wrap on all. My mom thought it looked more elegant that way. She didn't like seeing stems sticking out which is why I was always wrapping mine (I didn't want green showing against my dress).
I liked both ways for the BMs but didn't feel strongly about it, so I wrapped them up to be consistant.
I think some bouquets look better with the full wrap and others look great either way.

I woould go covered. If you dont it might stain your dress. I also think it looks nicer
