So we had our Oheka tasting yesterday. We decided to serve:

Porcini Mushroom and Roasted Tomato Risotto with Shaved Reggiano Cheese with Truffle Oil and Balsamic Reduction

Entrees:
Rack of American Lamb, Garlic and Herb Mashed Potatoes, Baby Vegetables and Minted Demi Glace

Apple and Sage Stuffed Chicken Breast, whipped sweet potatoes and calavados brandy sauce

** But we can't decide on the fish. Which one do you think is better:

Pan Seared Chilean Sea Bass, Steamed Jasmine Rice and Citrus Fondue

or

Seared Atlantic Salmon with Saffrom Rice and Champagne Truffle Sauce
