EastCoastGirl - I was also looking for something out east (my mom is in East Hampton). We picked the Southampton Inn because it's very elegant, but also very casual... and they REALLY work with you on the price. Originally they quoted me $125, for any time, any day, but we got them to go down to $100 per person, TAX AND SERVICE INCLUDED!!
Other places to look at... the Inn at Quogue is cute, but small. Also, I got this from Dan's Paper's:
