Post your SuperBowl recipe ideas here please!

DH and I are having some people over this Sunday for the SuperBowl. I have the appetizers worked out, but now I just need a couple of main courses. Last year I did meatballs and also sausage and peppers and bought some hero rolls so everyone could make sandwiches.

Any ideas of what I should do this year?

You could buy a 3 ft hero or something.

Stuffed shells?
Spiral Ham?
Turkey?

I love sausage and peppers!!!!

Panini and Chicken with Roasted Peppers, it's a hot sandwich but really good. The recipe is at home so I can't garauntee this is correct, I'll check at home to confirm...

from off the top of my head you need:
2 tblspn basalmic vinegar
2 tblespn dijon mustard
1/8 cup basil leaves
pinch salt
pinch pepper
6 teaspn olive oil
4 chicken cutlets
1 jar of roasted red peppers
6 ozs mozerella cheese
1 loaf semolina bread

-heat 2 teaspms olive oil in skillet
-brown chicken and set aside
-cut semolina bread lengthwise
-whisk together mustard, vinegar, salt, pepper
-slowly whisk in 2 teaspoons olive oil
-brush mixture onto top and bottom halves of bread
-shake 1/2 of basil leaves liberally on bottom half of bread
-layer chicken, cheese and roasted peper onto bread and top with remaining basil leaves, close the sandwish and cut into quarters.
-heat remaininf 2 teaspoons on olive oil in skillet and place sandwishes in skillet with another heavy skillet or pan on top (to compress the sandwiches), cook for 3-4 minutes or until bottoms are brown
-serve warm

P.S. do not eat these with milk and then drink 5 beers and 3 glasses of scotch and a cranberry&vodka, there's a good chance you'll vomit. Just a tip from Mr Boots' friends.

Good ideas girls but do you know how hard it is to find decent Italian bread in VA?
I may have to get motivated and drive 45 minutes to Arlington to go to one of the only places that sells good Italian deli stuff. Oh and it's called The Italian Store. How original!

Wendy - how to you make London Broil without it tasting like shoe leather???? Large pieces of meat scare me......
