I don't know what kind of potato salad you like, but I have a good recipe for a ' chunky red potato salad'
i always make a huge batch cause my family loves this!! So adjust as needed...also my measurements aren't exact but i will try!
boil 5 lbds red potato with skin on. Some skin will fall off while boiling. Remove from water and drain on towel when tender. Leave the skin that is left on and break the potatos into big chunks ( about 1-2 inch squares)
Sprinkle about 1 1/2 teaspoons white vinegar over potatos. Coat well. Add mayo, to your liking. I would say I use at least 2 -2 1/2 cups. (you usually have to add more before serving b/c a lot of it gets absorbed) sprinle in about 2 tablespoons parsley- mix well.
Depending on time and availibility sometimes i will add some raw onion or some chopped hard boiled eggs.
Hope the recipe makes sense. I never actually wrote down how much I use, I just kind of go with it

Re: Potato Salad
2 dozen small new potatoes, peeled and halved 4 hard-boiled eggs, chopped 1 to 2 celery stalks, finely diced 1 medium onion, diced 2 tablespoons chopped pimento 3 tablespoons sweet relish 4 to 5 tablespoons mayonnaise 1 tablespoon yellow mustard 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 1/2 teaspoon sugar
Boil the potatoes for about 20 minutes, or until tender, and allow them to cool. In a large bowl, combine the remaining ingredients. Mix and chill before serving
(I don't use relish or pimento - because typically I don't have either in the house!)

Re: Potato Salad
HOw ever many potatoes you want.. it doesn't matter... boil them until they are soft when you insert a fork.... let them cool.. when they are cool, you should be able to easily peel off the skin... Cut the potatoes into thin slices... IN a separate bowl, combine equal parts mayo and sour cream... add chopped onions be careful not to add too much(in a mini food processer) and salt and pepper... Add this mixture to the potatoes and mix until coated.. make sure to save extra mixture.. put in the fridge... the potatoes should absorb most of the mixture, so when you are ready to serve, add some of the left over mixture.. This is my mom's recipe for potato salad and is always a hit...
