Re: POTATOES
i am irish too - and i season everything with adobo...
as for mashed potatoes - you can add eggs/egg whites instead of milk [but you have to do it right away so that the egg gets cooked in - this is a lactose intolerant way of doing it] - it gives the potatoes a different flavor and color - its a nice change once in a while
i also like to add sour cream and chives to mashed potatoes
i make roasted red potatoes with onion soup mix -

These are great ideas. Thanks everyone.
I actually roasted some tonight and put parm cheese on them. Fattening? Yes, but I dont care it was so worth it.

Re: POTATOES
I have the best potato recipe but I must tell you it is not low in fat. My grandma used to use canned potatoes since it's a lot quicker but I am sure you can just boil regular potatoes to soften them and then cut them into small pieces. Whichever you choose to use - follow these steps:
Cut potatoes Use 1 stick of butter and cut the butter and scatter it into different spots in the pan Season with Garlic Salt, Paprika, Black Pepper Use locatelli grated cheese
Put in the oven for 20-25 minutes and these potatoes will meltt in your mouth.
If I want to make the recipe low in fat I use I Can't Believe it's not Butter spray...it's not the same but it is still really good.
