We went with stainless but you should have some non-stick my set has non-stick additions that can be added. You need nonstick to make eggs & other delicate foods (I didn't know this but that is what farberware told me)

Re: Pots- Nonstick or stainless???
do you cook alot?
It all depends. Stainless will last ALOT longer, but it is a bit more challenging to cook one (easy once you get used to it though!) The non stick will start to show wear and tear much quicker.
If you are looking for EASY - go with non-stick.
most popular nowadays is to get a set of stainless, and then supplement a few non stick pans in there (I did a griddle and an omelette pan.)

Re: Pots- Nonstick or stainless???
Depends on the type of cooking you do. Nonstick works great for eggs and quesadellia. I use stainless for everything else, especially anything type of meat I want to sear. Stainless is also better when making things liek a roux or reduction sauce. Can you tell I watch too much Food Network?
But definitely get some nonstick frying pans.

non stick also doesn't brown as well (I think someone above mentioned searing). I noticed even on high heat the meat doesn't brown up nice.

Re: Pots- Nonstick or stainless???
I asked a friend of mine who was a bridal editor for the retail side of things, and she covered the various registries, etc. Basically, it depends what you want to do with the pots/pans and how often you cook.
If you want a good set that will last for life, she recommended All Clad non-stick. However, Calphalon or Circulon non-stick are pretty good, though she said they'll probably only last 10 years, possibly 15 depending upon the kind of cooking you do.
That said, I like the ease of nonstick, and will request that for my saute and frying pans.
She has some interesting things to say about the industry in general. Esp. the regestries, and yes, they will try to sell you on things you don't really need.

We just went to a presentation by 21st century bridal and stainless is much better. But I think it's more costly too. Tho in the long run quality gets you further.

Re: Pots- Nonstick or stainless???
I would go stainless and get a few non-stick pieces like some of the girls already said. ScanPan is THE BEST non-stick. I have a Calphalon professional non-stick omelette pan and it's already losing it's coating after about 2 years. ScanPan's non-stick coating is so durable that you can use metal utensils with it.

Re: Pots- Nonstick or stainless???
I've got lot's of different pieces. Mostly All stainless and non-stick skillets. I have some Caphalon non-stick too which I don't like as much. I prefer the way stainless cooks better but the non-stick pans clean up easier. It really depends on your cooking style. I even have a cheap non-stick pan I use for a lot of stuff that I got at the Supermarket for $10- I am a pot whore.
Just got my All Clad Asparagus pot from William Sonoma. I bought myself a present.

I registered small sets of both. I love non stick however you cannot do everything with them like mashing potatoes.

Re: Pots- Nonstick or stainless???
FMIL got us a starter set of a Macys brand knock off of all clad which apparently they don't sell anymore (I think all clad sued them) but I'm going with non stick all clad. I would never think to make a sause in a nonstick pot
