The key to a great quesadilla is bacon!!!!

ingredients:
-soft tortillas (whatever kind you want! )
-Chicken (I use leftovers from grilled/or cutlets even) or beef, whatever you like.
-CHEESE!!!! (grated, whatever you like!-comes out best when you use more than one kind)
-pico de gallo, or salsa, or diced tomatoes.
-sour cream (only if you like it)
-bacon-cooked and crumbled (just one or two strips in the microwave, you only need a little)
And that's it...

1. Spray an omlette pan (skillet) with some no stick cooking spray.
2. Put tortilla in the pan.
3. Place cheese down first, the chicken and everything else, and then cheese on top on ONE HALF OF THE TORTILLA.
4. Place cover on pan for a minute (until cheese melts).
5. use a spatula to fold the empty side of tortilla over the full side, and press down to make the cheese stick...
6. flip and cook for a minute on the other side..
7. place onto plate and cut into wedges....

Serve with sour cream, and salsa!

I love quesadilla's but never thought about putting bacon in them...I'm going to try that out.
