How early can I make cookies for my 12:30 Rehersal lunch on Sat?
If it makes any difference I am using oil nistead of egg (I think, need to look at recipe) and non hydrogenated soy butter substitute.
Thanks!

Re: Question for all you bakers out there
I have never made vegan cookies (I think that is what you are making) so I am not sure. But I usually make my Christmas Cookies a week to two weeks ahead and they are still soft for a month. The key is to take them out when they are slightle (barely) brown on the bottom, almost a dark yellow. Then you leave them on the pan for two additional minutes before moving them to cooling racks. Also be sure to store them in an airtight container until the day of. Hope this helps.

I'd make them no more than 2 days before.

Same here. I've never made vegan recipe cookies. But, my regular holiday cookies last up through a month. so you can make them at least the weekend before if you want to free yourself up for other things.
