quick and healthy dinners? Please help!

So now that FH and I are back to going to the gym we want to try and get on the habit of making dinner each night and hopefully something quick and easy. Does anyone have quick, easy and healthy recipes they can post? Thanks soooo much!

What about cooking on the weekend and freezing things?

We make a TON of backed chicken cutlets, lean turkey meatballs, we will cook lean pork cutlets/tenderloin (it only takes about 20 minutes for the cutlets), baked tilapia is great!

Any lean protein, with some steamed veggies and on workout days a good healthy carb (brown rice, sweet potatoes..) is great! FM if you want some more info!

Check out simple salmon or swordfish recipes. You can always get a tiny bit of olive oil, very little butter and pepper and lemon juice and cook the fish and it comes out tasty. Steamed veggies along that is good. Taking a chicken and putting spices on it and letting it marinate overnight and then baking it in the oven is great too.

What kind of meals are you looking into? Low carb? High protein? Or just low fat? Whatever you want, go to Foodnetwork.Com and check out some recipes there. It's a great source.

turkey chili is great in the slow cooker. brown the turkey and drain. out in cooker with a can of diced tomatos in sauce, onions, peppers, beans, chili powder. turn on low and cook for 6-8 hours.

i also LOVE to make chicken pieces in the slow cooker with bbq sauce. put it in the cooker and cook on low for 6-8 hours. the chicken will fall off the bone!

I make healthy versions of our faves. FH likes arroz con pollo- so we do it with brown rice, fresh veggies, organic beans and seasoning. I make a lot of baked fish, whole grain pastas with homemade sauces (pesto, marinara, marsala).

i hope you don't think this is gross, but FH and I love making turkey chili but even easier - cook a pkg of ground turkey with a chopped onion, then throw that in the slow cooker with a can of plain tomato sauce (not the jarred kind), a jar of chunky salsa, a can of chopped green chiles, some hot sauce and a few tbsp of chili powder. leave it all day at work, come home and throw in a can of pinto beans and you're all set. it's SO good and super easy - the only thing to chop up is the onion!

stir fry is always a good option. any lean protein and veggies in a pan with soy sauce and i always add some ginger and garlic (powdered is okay). i do generally use a drop or two of sesame oil, but if you're sparing with the fat it's still healthy.

I just got a bunch of great quick and healthy recipes off of the Weight Watchers website. I don't belong to Weight Watchers, but you can still print recipes off of their site!
