rehearsal dinner menu?

i have most of the menu picked out- not sure about which chicken or seafood (i need to pick one of each)

chicken: marsala, francaise, florentine, cordon bleu, madeira, or provencale

seafood: salmon coulibiac, salmon filet, stuffed shrimp, flounder florentine, flounder stuffed w/ crabmeat, tilapia stuffed w/ asparagus and crabmeat

I like chicken fracaise ( we picked this one for ours) or Chicken Marsala

and flounder with crabmeat! Yummy I am so hungry now!
