If you really like Swan Club and Westbury Manor, why not just focus on those two and try to negotiate? You might be able to get a better deal if you book for June 2012. The closer it is, usually they want to fill the spots.

Also, I suggest being open to visiting these other locations. When you drive up and walk in, you get a much better sense of the place. The websites are hard to really tell the ambiance. You might love a place that you didn't think you would! Plus, you might find something in your price range and it's good to have comparisons.

I know I mentioned some of them already, but go visit them if you can, it's the only way to know:

Villa Lombardis, Douglaston Manor, Venetian Yacht Club, Giorgios (daytime in your price range), Jericho Terrace, Crest Hollow Country Club, Fox Hollow.

For May or June you will probably have to do a daytime wedding or a Thursday night to get 10k. Otherwise, you can get that price at Crest Hollow and Jericho Terrace for evening.
